Mixed berry and yoghurt granola bar
Makes 12
INGREDIENTS
- 2 cups rolled oats
- ¼ cup finely shredded coconut
- 2 tbs. macadamia nut meal
- 2 tbs. chia seeds
- 1 egg white
- 2 tbs. peanut oil
- ¼ cup pure maple syrup
- 150g mixed berries
- 200g Plain Greek/natural yoghurt
- 50g white chocolate melts, melted
METHOD
- Preheat oven to 180 degrees. Line a 16 x 26cm slice pan with baking paper.
- Combine all ingredients in a large mixing bowl.
- Press mixture into pan.
- Bake for 30 minutes or until golden.
- Drizzle with melted white chocolate and cut into slices to serve.
